Oatmeal Chocolate Chip Cookies
Everyone loves a classic oatmeal chocolate chip cookie and my mum's recipe delivers. These remind me of my childhood and it wasn't until this week that I made up a batch of my own. Lightly crispy on the outside, soft in the middle and bursting with chocolate chunks, these are my favourite. I made them 3 days ago and there were only 3 left when I left the house this morning (guaranteed they're gone by now). Oatmeal Chocolate Chip Cookies
makes 3-4 dozen cookies
1 cup unsalted butter, softened
3/4 cup packed brown sugar
1/4 cup granulated sugar
1 tsp vanilla extract
1 1/2 cups flour
1/2 tsp salt
1 tsp baking soda
1/4 cup boiling water
2 cups oats
1/2 cup shredded unsweetened coconut
300 g semi sweet chocolate chips
1. Beat butter brown sugar, granulated sugar and vanilla until light and fluffy
2. Add flour and salt. Mix well.
3. In a small bowl or cup, dissolve baking soda in the boiling water. Add to flour mixture.
4. Stir in rolled oats, coconut and chocolate chips.
5. Drop batter onto parchment paper lined cookie sheets and lightly squish them down a bit.
6. Bake at 350ºF for 10-12 minutes, until just golden brown.
